2 Ingredient Breakfast: Eggs in Bread

Everyone needs a quick go to recipe in the morning, especially when you barely have the energy to cook anything. I know several, several, books and websites out there tell you that you are normally fully energised in the mornings, but that’s not always true. I made these one weekend morning, when all i had was some butter, plain bread and eggs in the fridge.

I used my muffin pan to put these together. I find that it helps if you put cooking spray and butter in the pan, as it makes the bread cups easier to remove once baked. And also be sure to press the eggs firmly into the pan, as we do not want the egg to be overflowing. If you don’t have muffin pans at home, try using the disposable aluminium muffin cups.

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

Yield: Serves 2


  • 2 Medium Eggs
  • 2 slices of white bread
  • Butter
  • Salt to taste


  1. Preheat the oven to 160 degrees celsius. After greasing the muffin pan, press in each bread slice into the muffin holder, ensuring that the bread does not tear. Then, crack in the egg and season with some salt and pepper, if you like.
  2. Bake for 15 minutes or less, depending on how well you'd like your egg done. Then, serve warm with some Ikan Bilis Sambal.
