A quick roasted carrot recipe that takes less than 30 minutes!
Carrots are the easiest fix for a sweet yet nutritious side at the dinner table. This recipe hardly does anything to the carrots, aside from adding some comforting warmth with spices. The natural sweetness of the root vegetable here is brought out with the honey.
You can use flavoured honey to put this dish together, too. I have tried this with Longan Honey, and Ginger Honey, too!

You will need
350g Carrots, peeled and chopped
2 Tbsp Olive Oil
1 Tsp Cumin Seed Powder
1 Tsp Coriander Seed Powder
1 Tsp Nepalese/Thai Chilli Flakes
1 Tbsp Honey, the runny sort

Preheat the oven to 200 Degrees Celsius.
Line a moderately-sized roasting tray with foil and place all the ingredients in it. With your hands, mix everything so that the carrots are coated with the honeyed spices. Place in the oven and roast for 25 minutes, or until golden.
Remove and enjoy while warm.
