Love Hummus, and wondering what else you can do to make Hummus exciting? Here’s a really cool recipe I developed for the Batu Lesung Spice Co., Rendang Hummus. I had made something similar to this previously, for our friends at Mekhala (Thai Red Curry hummus) which was spicy and earthy. This Hummus recipe is all that, too, but with such a Singaporean/Malaysian kick that will transport you to the alleyways of Penang where you can find some of the best Rendang.
Hummus is actually a great diet food, you can have it with some carrot sticks or pita-bread and it’s so filling, you can skip lunch. Or, you can have it as a snack, too! It takes only 10 mins to put together, guys, so easy peasy and you’re full. Hope you like the video, can’t wait to get into the kitchen and make more.
Ingredients
- 1 Can of Chickpeas
- 3 Tbsp of Tahini
- 4 Tbsp of Coconut Milk
- 3 Tbsp of Plain Yoghurt
- 3 Tbsp of Batu Lesung Rendang Paste
- 1 Tbsp of Olive Oil
- 1 Clove of Garlic, peeled
- 1 Tsp of Salt
- 1 Tbsp of Freshly Squeezed Lemon Juice
- 1 Tbsp of Cilantro/Coriander Leaves
Method
- Put all the ingredients into the food processer and blend till smooth and well combined. We kept ours a tad lumpy, as we like it that way. Use as a delicious drip for a french loaf, pita or other breads.
