If you’re looking for an Italian restaurant in Singapore that goes beyond the familiar, Bistecca Tuscan Steakhouse on Mohamed Sultan Road has just given you a very good reason to book a table in August. 

The restaurant has launched A Taste of Emilia-Romagna, a limited-edition sharing set menu celebrating one of Italy’s most storied gastronomic regions. This exclusive dinner is available for one month at $148++ per person.

If you’ve spent any time eating your way through Italy, you’ll know that Emilia-Romagna occupies a very particular place in the country’s food culture. This is the region that gave the world Parmigiano-Reggiano, Prosciutto di Parma, Mortadella, Aceto Balsamico di Modena, and fresh egg pasta in more forms than most people know exist. 

The menu is available throughout August alongside Bistecca’s signature à la carte dinner menu.

Why Emilia-Romagna? And Why Does It Matter?

Emilia-Romagna sits in northern Italy, running from the Po Valley across to the Adriatic coast. Its culinary reputation rests on two things: exceptional raw ingredients and recipes that have remained unchanged for centuries. 

Barrel-aged balsamic vinegar from Modena tastes nothing like the bottle you find in most supermarkets. Mortadella from Bologna is a deeply flavoured, generously fatty sausage. Fresh egg pasta from this region (think Balanzoni, Tortellini, Tagliatelle) is made with a dough that uses more egg yolk than the rest of Italy, giving it a richness and colour. 

Bistecca’s kitchen has built a menu around these fresh, flavourful ingredients, carving a difference in Italian food in Singapore.

Sharing Platter

Balanzoni Primi Dish and Beef Taretare

The set menu is structured as a sharing experience, beginning with a primi course designed for the whole table.

Beef Tartare opens the meal, made with Balsamic di Modena, fried capers and aged Parmesan. The balsamic adds a rounded acidity that lifts the raw beef without overpowering it.

Balanzoni, stuffed pasta parcels from Bologna, come filled with Mortadella sausage, ricotta and nutmeg, finished with sage. Balanzoni are close relatives of Tortellini but larger and greener (the pasta itself is often made with spinach). Rarely seen outside of Emilia-Romagna, getting them right requires a kind of pasta-making precision 

A Pistachio & Endive Salad with Parmesan cream and pistachio vinaigrette rounds out the shared starter course with brightness and texture.

The mains

The mains centre on Bistecca’s signature sharing steaks. Either the Costata or the legendary Fiorentina, served in sizes calibrated to your party size. The Italian restaurant in Singapore that introduced the city to Florentine steak is now adding Emilia-Romagnan to its table. 

Sides include Grilled Asparagus with pangrattato breadcrumbs, Parmesan and lemon; Brussels Sprouts with smoked bacon and whole grain mustard; and Roasted Baby Carrots glazed with aged balsamic vinegar and hazelnut oil. 

Dessert is Torta Duchessa, Bistecca’s flourless chocolate and hazelnut cake from Parma, served with zabaione and marinated cherry. 

The set is priced at $148++ per person and includes a glass of sparkling, red, or white wine.
