Grand Copthorne Waterfront’s Thailand Flavourscape Buffet is back with serious firepower. Three chefs, six hands, and a whole season of Thailand’s regional cooking. 

Thailand Flavourscape Buffet is running from 13 July to 23 August at Food Capital, Grand Copthorne Waterfront Hotel, Singapore. This year’s edition covers the full breadth of Thailand’s regional cuisine through a six-hands collaboration among three accomplished chefs. 

The Royal Thai Embassy in Singapore is on board as a supporting partner.

Chef Nawamin “Boss” Pinpathomrat

MasterChef UK finalist and owner-chef of REALM Bangkok, REALM Songkhla and REALM Thumnoonvithim. If you’ve seen Chef Nawamin cook, you’ll know why he was a finalist.

His approach is rooted in traditional Thai recipes but expressed through refined contemporary technique. Chef Boss’s cooking makes familiar flavours feel like you’re tasting them properly for the first time. His contributions to this menu draw from Southern Thailand and Bangkok, and they’re the dishes worth building your visit around.

Joining him is Chef Witoon Kamonphun, Head Chef of M Social Hotel Phuket, who brings deep knowledge of Phuket’s coastal kitchen. Think bold spice, fresh seafood, the kind of local ingredient fluency that comes from years of cooking in the region rather than just passing through. Holding things together in Singapore is Executive Chef David Toh of Grand Copthorne Waterfront, whose team provides the operational backbone that lets the two visiting chefs cook at their best.

Three kitchens’ worth of experience, one buffet. The combination works because each chef represents a different part of Thailand’s culinary map.

The menu reads like a tour of Thailand’s greatest hits, with enough lesser-known dishes woven in to keep things interesting for the well-travelled eater.

The Grand Tom Yum Goong is the kind of dish that sets the standard for everything that follows: a robust, aromatic prawn soup built on lemongrass, galangal and kaffir lime, with the balance of sour, spicy and savoury that makes a good tom yum one of the world’s great soups. 

The slow-braised, richly spiced Wagyu Massaman Curry bridges Thai and Persian culinary influences and rewards the patience it takes to make it properly. The Signature Yellow Curry Flower Crab is the showpiece seafood dish, and the Andaman Seafood Curry with Betel Leaves brings the coastal south to the table with herbs and premium seafood that feel like they belong on the coast rather than in a hotel ballroom.

If you’re going to pick one night to be there, make it 13 July.

The opening evening features a Thai-style Whole Golden Pig. This dish is served with Nam Jim Jaew, Thai chilli sauce and Thai seafood sauce. Alongside the food, Anurak Thai Arts & Culture brings classical Thai dance performances and live Khim music to Food Capital, rounding off the meal as a complete experience. There’s also a lucky draw with prizes, and Thai-inspired pop-up stalls rounding out the evening.

The Thailand Flavourscape Afternoon Tea ($68++ for two) pairs savoury and sweet Thai-inspired bites: 

  • Tom Yum Goong Seafood Tartlet
  • Lemongrass Chicken with Sweet Chilli Dip
  • Thai Fish Cakes, Thai Mango Macaron
  • Taro Coconut Mousse, Pandan Coconut Swiss Roll

All this with an AI-powered wellness assessment and a bespoke herbal tea recommendation from Luli. The wellness aspect of this tea runs daily from 3pm to 5pm, throughout the promotion period.
