Mama’s Fried Chicken

I am completely aware that in Asia, Mama has a different meaning other than a mother. But suiting this recipe with Mama in the title is me saying I don’t quite care about stereotypes. My mother has made this brand of fried chicken for the longest time, as far as I can remember. And it tastes great every single time she makes it.

Mama’s Fried Chicken

Prep Time: 2 hours

Cook Time: 30 minutes

Yield: Serves 4


  • 500g Chicken Wings (or drumsticks)
  • 2 Tbsp Ground Ginger
  • 2 Tbsp Ground Garlic
  • 1 Tbsp Turmeric Powder
  • 2 Tsp Cumin Seed Powder
  • 1/4 Cup Yoghurt
  • 2 Tbsp Olive Oil
  • Salt to taste


  1. Marinate the chicken by combining all the ingredients. Set aside for at least 2 hours, or in the refrigerator overnight. Then, dunk the raw marinated chicken in hot oil (in 2 batches), fry till cooked and golden, about 15 to 20 mins. This will differ in accordance with the cut of meat you're using.
  2. Serve warm with mayonnaise - yes, dreams do come true.
